Thinly slice the peaches and arrange them in a rosette pattern.

Sprinkle lightly withinfused sugar.

Let it rest for 5 minutes so that the sugar barely melts.

Just before serving, drizzle with oil and sprinkle with finely chopped zest and herbs.
